Aaaahhhhh.....

Sunday we had a practically perfect afternoon at Papa Ray and Grandma Jo's pool with our good friends the Quilty's.  The weather was perfect, the pool was balmy, Jim made his world class enchiladas and we spent the afternoon with the people we love.  Our own mini-'staycation' on a July Sunday afternoon.

I wouldn't even ask Jim for his recipe for the enchiladas.  Chirizo, peas, potatoes, cheese, some lard I don't dare to contemplate, the yummy goodness. But here's the recipes for some other goodies from the day.  Happy summer!

Papaya and Feta Salad (courtesy  of Ingrid Hoffman) which was actually Mango and Feta Salad

6 cups peeled, seeded and diced papaya (actually used 4-5 mangos)
1/2 cup chopped fresh mint leaves
3 T olive oil
2T lime juice
1 T honey
salt and pepper
1 cup crumbled feta
1/2 very thinly sliced red onion

Combine the papaya (mango), mint, feta and onions in a medium bowl.  Whisk together the olive oil, lime juice, honey salt and pepper, pour over and combine.

It may seem like an unusual bunch of ingredients, but it is delish!

Well, and, of course, there are the Monster Cookies!
